Green Goddess Chopped Salad
This Green Goddess Chopped Salad is a mouthful of protein and vegetables (very goddess-like) topped with a creamy, green dressing of fresh herbs.
Prevent your screen from going dark
Salad:
- 5 handfuls mixed spring greens
- 2 cups cooked chicken chopped
- 1 pint cherry tomatoes halved
- 1 cucumber chopped
- 1 cup carrots chopped
- 5 hard boiled eggs chopped
Green Goddess Dressing:
- 1 cup Greek yogurt 1% fat or higher
- 1 cup herbs (parsley, cilantro, basil, and/or dill) lightly packed
- ¼ cup scallion or chives lightly packed
- 2 tablespoons fresh tarragon optional
- 1 tablespoon lemon juice
Salad. Chop the chicken, tomatoes, cucumber, carrots, and hard-boiled eggs and add to each container evenly.
Assemble. Divide the mixed greens into each container. Next add all chopped ingredients.
Green Goddess Dressing. Blend all the ingredients in a blend or a food processor.
