Green Goddess Chopped Salad

This Green Goddess Chopped Salad is a mouthful of protein and vegetables (very goddess-like) topped with a creamy, green dressing of fresh herbs.

Servings 5 salads

INGREDIENTS

Salad:

  • 5 handfuls mixed spring greens
  • 2 cups cooked chicken chopped
  • 1 pint cherry tomatoes halved
  • 1 cucumber chopped
  • 1 cup carrots chopped
  • 5 hard boiled eggs chopped

Green Goddess Dressing:

  • 1 cup Greek yogurt 1% fat or higher
  • 1 cup herbs (parsley, cilantro, basil, and/or dill) lightly packed
  • ¼ cup scallion or chives lightly packed
  • 2 tablespoons fresh tarragon optional
  • 1 tablespoon lemon juice

INSTRUCTIONS

  • Salad. Chop the chicken, tomatoes, cucumber, carrots, and hard-boiled eggs and add to each container evenly.
  • Assemble. Divide the mixed greens into each container. Next add all chopped ingredients.
  • Green Goddess Dressing. Blend all the ingredients in a blend or a food processor.
