This Green Goddess Chopped Salad is a mouthful of protein and vegetables (very goddess-like) topped with a creamy, green dressing of fresh herbs.

What is Green Goddess dressing?
I’ve always wondered that too. It’s a cream base dressing with an assortment of herbs which gives it its stunning green color. Is there still a flavor you can’t put your finger on? It’s probably tarragon, which gives a light licorice taste.
This dressing is traditionally made with a mayonnaise base. To lighten this up, we’ll swamp the mayo with Greek yogurt. The rest (and here’s the fun part) is up to you and your fridge. I don’t know how it happens but I always have a bundle or two (or six) of parsley, cilantro, and scallions sitting around doing nothing in my produce drawer. Well look alive ladies, this dressing is made of a blend of herbs including parsley, cilantro, basil, dill, scallions, chives, and tarragon; pick and choose your poison. A squeeze of lemon will finish it off to add a bit of acidity and help cut the green taste.
I used 1 cup of parsley-cilantro mix and 1/4 cup of scallions this time around. Next time could change, depending on what I have on hand.

Green Goddess Chopped Salad
Ingredients
Salad:
- 5 handfuls mixed spring greens
- 2 cups cooked chicken, chopped
- 1 pint cherry tomatoes, halved
- 1 cucumber, chopped
- 1 cup carrots, chopped
- 5 hard boiled eggs, chopped
Green Goddess Dressing:
- 1 cup Greek yogurt, 1% fat or higher
- 1 cup herbs (parsley, cilantro, basil, and/or dill), lightly packed
- ¼ cup scallion or chives, lightly packed
- 2 tablespoons fresh tarragon, optional
- 1 tablespoon lemon juice
Instructions
- Salad. Chop the chicken, tomatoes, cucumber, carrots, and hard-boiled eggs and add to each container evenly.
- Assemble. Divide the mixed greens into each container. Next add all chopped ingredients.
- Green Goddess Dressing. Blend all the ingredients in a blend or a food processor.
