This Green Goddess Chopped Salad is a mouthful of protein and vegetables (very goddess-like) topped with a creamy, green dressing of fresh herbs.

What is Green Goddess dressing?

I’ve always wondered that too. It’s a cream base dressing with an assortment of herbs which gives it its stunning green color. Is there still a flavor you can’t put your finger on? It’s probably tarragon, which gives a light licorice taste.

This dressing is traditionally made with a mayonnaise base. To lighten this up, we’ll swamp the mayo with Greek yogurt. The rest (and here’s the fun part) is up to you and your fridge. I don’t know how it happens but I always have a bundle or two (or six) of parsley, cilantro, and scallions sitting around doing nothing in my produce drawer. Well look alive ladies, this dressing is made of a blend of herbs including parsley, cilantro, basil, dill, scallions, chives, and tarragon; pick and choose your poison. A squeeze of lemon will finish it off to add a bit of acidity and help cut the green taste.

I used 1 cup of parsley-cilantro mix and 1/4 cup of scallions this time around. Next time could change, depending on what I have on hand.

Green Goddess Chopped Salad Ingredients:

The real question is how do these ingredients make us goddesses?

  • Mixed Greens: All leafy greens contain chlorophyll which helps the detoxification process.
  • Cherry Tomatoes: Low in calories and nutrient-dense.
  • Cucumbers: Added hydration.
  • Carrots: Support your immunity.
  • Chicken: Lean protein to keep us strong.
  • Hard Boiled Egg: The incredible, edible egg.
  • Green Goddess Dressing: Giving a purpose to unused herbs.

Chicken Options:

  • Blackened Chicken
  • Shredded Chicken in the Slow Cooker
  • Store-bought rotisserie chicken
