Tender, juicy, and OH SO flavorful, this blackened chicken recipe is a great addition to any dish!

I really love this recipe because the odds are in our favor that we already have these spices on hand. Contrary to someone’s belief, this isn’t burnt chicken. “Blackening” refers to coating the food in a blend of spices that take on a dark blackish color when cooked. But it’s kind of fun to fool someone who thinks it’s burnt and this is in disbelief how the chicken could be so tender and juicy. The absurdity!
Blackened Spices:
- Paprika
- Thyme
- Garlic Powder
- Onion Powder
- Oregano
- Salt
- Cayenne
Cooking Tips:
- Prep the Chicken: Cut the chicken breast lengthwise for even cooking.
- Mix and Rub on the Spices: Mix the spices in a small bowl. Sprinkle and rub the spices on both sides of the chicken breast.
- Sear on the Stove: Sear the chicken on the stove to lock in the juices. If using a smaller pan, maybe do two breasts at a time. We want to get a nice crisp sear and over-packing the pan might create too much moisture.
- Bake in the Oven: Finish cooking in the oven to 160 degrees. The chicken will continue cooking to 165 degrees while resting.

Yields: 4 servings
Ingredients
- 2 chicken breasts
- ½ teaspoon paprika, thyme, garlic powder, onion powder, each
- ¼ teaspoon oregano and salt, each
- ⅛ teaspoon cayenne , optional
- 1 tablespoon olive oil
Instructions
- Prep. Prehead the oven to 350℉ and line a baking sheet with alumnimum foil. Next, rinse the chicken breasts and pat dry with a paper towel. Cut each breast lengthwise.
- Mix and Rub on the Spices: Mix the spices in a small bowl. Sprinkle and rub the spices on both sides of the chicken breast.
- Sear on the Stove: Preheat a large pan wiht olive oil on the stove on medium-high. Sear each side of the chicken breast for 1 minute per side.
- Bake the Chicken. Once seared, place chicken on prepared baking sheet and bake in the oven for 6-8 minutes or until chicken reaches 160℉. Let chicken rest for 5 minutes.
